Potatoes are affordable and have a long shelf life, allowing families to increase their dollars. “I know I hate it when I buy vegetables at the store and they go bad before I have a chance to cook them,” said HarpStreet. “With potatoes, you have fresh produce that will last for weeks! “My number one tip is to cut the potatoes into smaller pieces to roast them for faster cooking—or even just heat them in the air fryer,” said Harpstreet. Roasted potatoes are easy to prepare and can be used throughout the week to make dishes like bowls and burritos more filling and nutritious. “Finally, the freezer is your friend.
